One of the things we love to do when we travel is to eat all of the local food that we can. It really doesn’t matter to us if it’s a super fancy place or a hole in the wall, we just like to eat whatever the people who live there eat. A few months ago I had the opportunity to travel to Houston, which is a culinary delight. Houston has some FINE food! And the fact that they have many nationalities and ethnicities represented in their population lends to a wonderful variety of restaurants and styles of eating. And of course, their Tex-Mex is like no other! We ate at every Mexican joint we could find, and boy, was it ever incredible. One of the dishes we had that I came home wanting to try was Breakfast Tacos.

I’d heard about breakfast tacos before, but couldn’t really imagine that they would be good. I mean, Mexican food for breakfast just didn’t sound appetizing. But once I tried good, authentic breakfast tacos, I was hooked. Once I returned home, I couldn’t wait to make them for my family. But you know we couldn’t just make plain breakfast tacos, we had to make them ALABAMA STYLE.

The first step is to lay out your tortillas on individual pieces of aluminum foil because you will later wrap them to let them steam. This recipe is enough for 6-8- breakfast tacos.

For Alabama Style Breakfast Tacos, put about three tablespoons of butter in a skillet on medium heat.

Dice a half pound of Conecuh sausage, hot or mild, and throw in a half of a diced onion. Let them cook until the potatoes are tender – about 20-25 minutes.

In a separate bowl, scramble five eggs. Pour over skillet and season with house seasoning. Scramble it all together until eggs are cooked – about three minutes.

Spoon enough egg mixture on tortilla to cover half. Top with grated cheese if desired. Fold tortilla in half.

Wrap breakfast tacos in foil and let sit about two minutes to steam.

Open foil and add fresh pico de gallo or salsa to tacos. I usually make my own, but this time I tried out a new brand we found at Cosco. It was delicious!

Breakfast Tacos are very versatile, and you can use any combo of your favorite breakfast meats, veggies, and cheeses. You can also add sour cream or a favorite sauce like jalapeno dip. I give you permission to make the recipe your own! 🙂

Alabama’s BBQ Scene

When you grow up in Sweet Home Alabama, a good plate of BBQ is not just dinner, it’s a way of life. You cut your teeth on rib bones, and you learn early how to look for the best bark on a brisket. Alabama has an existing and solid reputation as a food destination, but Alabama’s BBQ scene has exploded in the last few years. Our state’s BBQ restaurants and traditions are consistently featured as some of the best in the US and in national media publications. Our state’s tourism department has even declared 2015 as “The Year of Alabama BBQ.” If you’ve ever thought about a trip to the historical civil rights landmarks, the Space and Rocket Museum, or a visit to our beautiful beaches, plan to make several stops along the BBQ trail. You can find a fun list of road trips to Alabama here.

While the best BBQ joints in Alabama are rarely fancy, you will no doubt experience the friendliness and hospitality for which Alabama is widely known. We are a laid-back bunch who knows how to relax and enjoy good food and good company. Life, as they say, moves slower in Alabama, and enjoying a slab of ribs or a BBQ sandwich with friends is definitely a favorite pastime. Every Alabamian has their own personal favorites when it comes to our long list of BBQ restaurants, and I certainly have my favorite spots to meet up with friends and family for dinner.

I live in Birmingham, so the BBQ spots in our area are near and dear to me. First fave: Full Moon.

At Full Moon, you really can’t go wrong with the pork plate, the black angus beef brisket, or the hickory smoked turkey. But whatever you meat you choose, be sure to pair it with their famous vinegar-based slaw, top it with their chow-chow, and round it out with a half-moon cookie for dessert.

Jim ‘N Nicks is a Birmingham landmark, and it is always a crowd-pleaser. I’m a fan of the pulled pork sandwich and fries, but don’t miss their cheddar biscuits. Yeah, you’re gonna ask for another round of those!

The newest BBQ joint in town is Saw’s, and it has quickly made a name for itself on Alabama’s BBQ scene. Saw’s serves a delicious pork sandwich, served with fried pickles. But if you aren’t in the mood for BBQ, be sure to try the pork on cheese grits, piled with greens and topped with curls of light onion rings.

We frequently head north to visit the US Space and Rocket Center or various other north Alabama attractions. When we are in Decatur, we never miss Big Bob Gibson’s BBQ, home of the original Alabama white sauce.

They have other great sauces as well, but my preference is the white sauce on smoked chicken.

Football is king in Alabama, and in the fall we are a state divided right down the middle. Half of us are yelling “Roll Tide” for the University of Alabama, and the rest of us are yelling “War Eagle,” the battle cry of Auburn University.

If Tuscaloosa is your destination, Dreamland is a must-do. I’ve been going to Dreamland since the original location was the only location.

To get the true Dreamland experience, order ribs and white bread. You’ll get a rack of ribs and several pieces of white sandwich bread. That’s it. And you’ll be in heaven.

If you’re headed to the Plains for a ballgame, be sure to stop in at Mike &Ed’s. Like I said, we don’t make things fancy in Alabama. We serve our sweet tea nice and cold, but at Mike & Ed’s you’ll have to get it right out of a trash can. DOn’t worry… it’s clean.

One of the most notable attractions in Alabama is our coastline. Alabama beaches are the most beautiful anywhere around, as far as I’m concerned. They are sugar white and surrounded by the most quaint and charming small towns. They are definitely worth staying a few days! When in south Alabama, don’t miss the small town of Fairhope, home of lovely shops and fun restaurants like Ben’s BBQ. While I’ve never been to Ben’s, I have it on good authority that it’s the best BBQ in town.

Fairhope isn’t the only coastal town with good BBQ. Mobile is home to two notable joints. The Brick Pit was featured on an episode of “Man vs. Food.”

And I have it on good authority from friends who KNOW good BBQ that Saucy Q is the place to be. With a menu like this, I know the food is the real deal!

Lemon Dill Aioli

There is nothing better in this world than a pan of piping hot roasted oven fries with sea salt. And there is nothing better on those oven fries than a good sauce. Last night we’d had enough of the meat and three meals, so I roasted a pan of sweet potatoes and a pan of sliced red potatoes, both coated in olive oil and sprinkled with sea salt. I made a batch of Creamy Sriracha Dipping Sauce for the sweet potatoes and a bowl of Lemon Dill Aioli for the red potatoes. My stars, I think it was the best meal we’ve had in ages.

This was the first time I’ve made aioli, and it was super easy and so, so delicious. The lemon and dill work perfectly together, and they set off the taste of the roasted oven fries in a way that might bring a tear to your eye.

All you’ll need is about a cup of mayonnaise, 1/4 cup of lemon juice (I used bottled this time around, but fresh-squeezed would be great, too), 1 tablespoon grainy mustard, 1 tablespoon dried dill, and 1/2 teaspoon of garlic powder. Mix them together, let it sit for a minute so the flavors get to know each other, and serve it up. So easy. So delicious.

Lemon Dill Aioli is also commonly served on grilled fish like salmon, but it would also be terrific on chicken or beef. It’s a good all-purpose sauce.

Chicken Piccata has always been one of my husband’s favorite dishes. The tart lemon, salty capers, butter, and white wine are the perfect combination of flavors. We typically serve it over pasta, but you can also serve it with homemade mashed potatoes or roasted potatoes.

One thing to remember about Chicken Piccata is that it cooks quickly. It really helps to have all of your ingredients laid out, and even have it measured out if you can.

2 boneless skinless chicken breasts
1 cup flour
Salt and Pepper
3 tablespoons butter
2 tablespoons olive oil
Juice of 3 lemons
1/2 cup white wine
1/2 box pasta
2 tablespoons capers
1 tablespoon dried chopped parsley

Boil water for noodles.

Melt butter and olive oil over medium high heat in a skillet. Mix flour, salt, and pepper together and dredge chicken in flour mixture.

When butter is melted and sizzling, reduce heat to medium and fry chicken for about 5 minutes on each side. (Frying time for chicken will vary depending on thickness. Be sure to cook chicken thoroughly.)

Place chicken over pasta and spoon extra sauce over the top. Sprinkle parsley as garnish.

This is one of those dishes that will make your family want to gather around your dinner table and hang out a while. Make it for them often. Talk about life with them. Dream big dreams with them. Enjoy your time with them.

Small Town America

Whenever we travel, I always enjoy getting off the interstate and taking the highways. You can see so much of small town America on the back roads that you miss when you take the quick and easy routes. It’s usually worth the time and effort it takes to travel lesser known roads because you get to see and experience the culture and flavor of the regions that make up our great country. God has made each part of our country to have its own unique personality, and we see so much of Him when we take time to enjoy other cultures.

We came home from Orlando through south Georgia, and its was all back roads for us! Here are a few of the local sights we would have missed if we hadn’t ventured off:

Magnolia Plantation has everything you need to feel like you’ve been through south Georgia! They are known for Vidalia onions, so the pepper sauce is abundant.

And who doesn’t need a pair of hot oink baby Minnetonka moccasins!?! Aren’t these the cutest thing you’ve ever seen? Too bad my girls are too big for these!

After a few minutes at Magnolia Plantation, we scurried up the road to Carroll’s Sausage and Meats.

But the meat selection is our kind of deal. We left $49 poorer, but with next week’s breakfasts planned.

The Big Guy was in his element choosing our smoked sausage, jerky, and hot breakfast sausage.

And we would have missed a real spectacle with these cotton fields, bursting with white. I so wish I’d had a pair of clippers to stop and snip a few branches. Do you think the farmer would have minded?

I’ve never regretted taking the long way home. We have had the opportunity to see so much more of what makes life have texture and purpose by taking the road less traveled. And you can take that as literally or as figuratively as you’d like.

Camry Bold, Auburn Bold

Y’all know I’m a sucker for an old classic made new again! Given the choice, I’ll take a remade classic over a new design anyway. The other day, Camry came calling to ask if I’d participate in a campaign featuring their 2015 model, and since it was all about putting a bold, new twist on a classic, I was in like Flynn.

The idea of the campaign was to take an old tradition (like the #1 selling car in America – the Camry), and be bold about doing it a new way. Since the 2015 Camry has been totally redesigned (a bold move, for sure!), we were to totally redesign our tradition as well. There’s nothing more traditional in the south than SEC football, so we went BOLD with a weekend in Auburn.

Let me back up a little. I am an Auburn graduate, but my husband went to Mississippi State. Through the years, we have had a fun rivalry between the two of us, and we have passed it on to our children. Although I look back on my time in Auburn as one of the best seasons of my life, our roots have been planted in Mississippi State since we married fifteen years ago. We take our girls there, attend ball games there, and it has been our “home team” for years. In fact, we have been to countless Mississippi State games over the years, but I have NEVER, not even once, taken my family to Auburn for a ballgame. This year I decided to get BOLD and do a weekend in Auburn RIGHT!

Of course, we needed a Camry for the weekend and Toyota graciously supplied us with a 2015 model to drive. Now, you know I drive a big ‘ole SUV, so I wasn’t sure how we would make it for a whole weekend in a sedan. Well, let’s just say we gained a whole new perspective about how well our family of four fits into a car. We had PLENTY of room, and I really enjoyed zipping around town in the Camry.

When I was a student at Auburn and people came to visit, the best place to stay was in one of the local hotels. Auburn wasn’t really known for having the best lodging choices, but how things have changed. Lake Martin is about 30 minutes away from Auburn, and it has really developed with tons of cottages that you can rent for ballgame weekends. So in the spirit of making BOLD changes to the old classics, we stayed at a precious home on Lake Martin.

And the food, oh the food! It was so, so fun to take my family back to one of my favorite hangouts, Cheeburger, Cheeseburger. The atmosphere was exactly the same, but the food was even better than I remembered. It was also a blast to take them to an old classic which was new to us, Kowliga on Lake Martin. The catfish poboys were to-die-for, and I could easily see us driving down for dinner one night soon. And you gotta love a place that brings out a six-pack of sauces…

But we upped the ante this time with a meal at Acre. You guys. I had no idea this place existed until I saw an article in Garden & Gun or Southern Living. But one look at the online menu, and we made a beeline right for it.

Chef David Bancroft has built his entire menu around putting a bold twist on southern classic dishes. And y’all, it just WORKS! Everything on the menu WORKS. I’ll write another post all about Acre, but I’ll leave you with the Sweet Potato Bread Pudding…

But the real highlight of the weekend was taking my family back to my old stomping grounds. I showed them my old apartment, which was in surprisingly good shape.

Then we headed over to a VIP tailgate in the basketball arena. We enjoyed Jim ‘N Nick’s BBQ while watching the ladies’ volleyball team practice. The girls even stocked up on TP, should we need it at Toomer’s Corner after the game. (Unfortunately, we got to take that TP home with us. Sadly, it wasn’t needed for a post-win celebration.)

And then I tok my family to their very first Auburn game. It was the first time I’d been back since my college days, and it was definitely more fun to share it with these three…

It was a bucket list experience to have them with me, and to see this guy in orange and blue was icing on the cake. It suits him, don’t you think?

I have such respect for a company like Toyota that takes a classic like the Camry, which is the most popular car in America as it is, and totally re-invents it to keep it at the top of its game. That’s a bold move that inspires me to be bold. What kind of bold move do you want to make?

Make Your Own Flavored Cooking Oil

Make Your Own Flavored Cooking Oil

It only takes one trip to the local specialty grocery store to see that flavored cooking oils can be quite expensive. Not long ago, a recipe I was making called for garlic-infused olive oil. It was about $12 at my corner market, which I consider to be highway robbery. I’m a work-at-home mom who has to be careful about where to save and where to splurge, and this was definitely NOT a splurge item for me. So I made my own. It was super easy, and you can make your own flavored cooking oil with any of your favorite herbs and spices. You can even mix flavors and create wonderfully flavored combinations. You can use flavored cooking oil to sauté fish, veggies, or chicken. Substitute it in any recipe that calls for olive oil. You can also use it with your favorite vinegar for salad dressing, and it is to-die-for as a dipping sauce for bread!

Choosing Your Oil

To make your own flavored cooking oil, the first step is to choose your oil. Most any cooking oil will work, so there is no need to purchase the most expensive oil on the shelf. Besides, you are adding flavor to the oil, so it will be delicious. To get a flavor that is closest to the herb or spice you are using, use a more flavorless oil like peanut, corn, vegetable, or canola oil. My personal preference, though, is to use olive oil. While the olive oil has its own distinct flavor which will infuse with the herbs and spices, I actually prefer this blending of flavors because I want the flavor of the olive oil to shine through.

Choosing Your Herbs and Spices

Hands down, my favorite herbs to use to make your own flavored cooking oil are ones that come from my herb garden. Basil and rosemary are my go-to herbs, but I also love to use green onion. Fresh roasted garlic and whole peppercorns are terrific spices to add, and you can adjust the level of punch to your liking. Don’t be afraid to mix herbs and spices together in oils. For an Italian flavored oil, you can combine basil, oregano, and garlic. Another favorite combo is lemon and garlic. When using fresh herbs, I typically add about 15 leaves of basin, about 5 garlic cloves, around 15 peppercorns, a tablespoon of lemon juice, and/or about 5 long sprigs of rosemary.

Choosing Your Container

Most discount stores like Walmart and Target carry olive oil dispensers. They are found in the kitchen section, and they are pretty inexpensive, usually around $5. You can order the Tablecraft Olive Oil Dispenser from Amazon, and I believe it is the one I used when I made this basil oil:

Make Your Own Flavored Cooking Oil

A couple of things to note:

  • Flavored cooking oils will last around ten days in the cabinet or around a month in the fridge. If you refrigerate, give the oil about 20 minutes to come to room temperature before using.
  • Using dried herbs can make the oil last longer, but be aware that chopped herbs can clog up the spout.
  • Flavored cooking oils make a fun gift for your friends and family. Who doesn’t love a handmade gift, especially one that is as useful and thoughtful as this!
