Although I love to cook, I would not consider baking to be my specialty. I don’t try a lot of new cake recipes, because I have my one standard recipe that I use for every cake I make. My mother-in-law gave me her Chocolate Chip Cake recipe before I was married, and it is really our favorite cake.

I think it was Paula Deen who said, “Ive never met a cake mix I didn’t like,” and that certainly holds true for me. This cake is made from a cake mix which had been jazzed up with additional ingredients. Super simple!

1 cup oil
1/2 cup water
1 small box instant chocolate pudding mix
4 eggs
1 tablespoon vanilla
1 pkg. butter flavor cake mix
8 oz. sour cream
6 oz. pkg. chocolate chips

Mix ingredients and pour into greased (not floured) bundt pan. (I use this one.) Bake at 325 degrees for one hour.

That’s it.

How much more simple can it get?

Actually, it gets better. This cake recipe is so versatile. If I want a lemon cake, I use a lemon cake mix and lemon pudding (and leave out the chocolate chips, of course). I have made strawberry cake with white chocolate pudding. I have made cupcakes for my girls’ birthday parties with Funfetti cake mix, vanilla pudding, and iced them with cream cheese frosting and sprinkles. The delicious combinations are endless.
