Have you read Mary Kay Andrews’ books? She is a Southern fiction writer who has done some hilarious books. She wrote Savannah Blues, Savannah Breeze, Blue Christmas, and Hissy Fit? They are light-hearted and fun. Great beach books. Anyhoo, woven through the plot of each book is a food item, for which she always gives the recipe. Her book Little Bitty Lies gives us the recipe for Beyond the Grave Chicken Salad. Here goes…
5 lbs chicken breasts
2 quarts water
parsley sprigs
1 large onion, quartered
1 teaspoon salt
2 chicken bouillon cubes
In a large pot, bring water and seasoning to boil, add chicken, lower heat, and simmer 40 minutes. Remove from heat, cool. Shred chicken and refrigerate.
Dressing:
1/2 cup bottled Italian salad dressing
1 cup Duke’s mayonnaise
1 tablespoon white vinegar
1 1/2 teaspoon celery seed
2 tablespoons sugar
1/8 teaspoon salt
dash paprika
Blend well together.
Salad:
Toss shredded chicken with one cup of dressing and let stand at least one hour to marinate. Combine remaining dressing with:
1/2 cup sour cream
1 tablespoon honey
Add to chicken and mix well. May add canned water chestnuts, blanched almonds, or chopped pecans.
what will happen if i go low fat on this? like, light mayo instead of dukes, light italian dressing, light sour cream?? i may try this.
