I know high school cafeterias get a bad rap, and I’m sure most of them deserve it. I don’t recall my own high school cafeteria being anything special. In fact, I’m sure I ate the salad bar more often than not because it was more palatable than whatever hot lunch was being served. But I do have fond memories of a couple of dishes they made that I will occasionally crave. Today it was their Peanut Butter Sheet Cake. The sweet ladies who ran our school cafeteria made a delicious white sheet cake that they topped with peanut butter icing/glaze. And since my scheduled lunch time was 10:50 (Why on earth so early???) the cake was always still warm. Perhaps my memories of the food are skewed by my affection for the people with whom I shared my lunch hour, but this Peanut Butter Sheet Cake brought back to some very some fun times.

Peanut Butter Sheet Cake is super easy to make, and it only takes about 30 minutes total, since you can put the icing on it as soon as it comes out of the oven.

For the cake:

Preheat oven to 350 degrees. In a large mixing bowl, combine flour, sugar, and salt and mix well. In a large measuring cup, pour in buttermilk, beaten eggs, vanilla, water, and baking soda. Stir or whisk together. Pour wet mixture into dry mixture and mix until all is well-blended. Pour into an ungreased jelly roll pan.

Bake 20 minutes.

For the icing:

Mix hot melted butter with peanut butter and marshmallow cream. Whisk together until blended. If not stirring well, heat in microwave for about 30 seconds and try again.

Whisk in confectioner’s sugar, vanilla, and milk. Blend well. If too thick, add more milk by tablespoons.

Pour over warm cake and spread evenly.

  3. This looks exactly like the peanut butter cake that I used to love in Junior High School. It is the only food that I remember liking from any school cafeteria ever, and I have looked for it before to no avail. Can’t wait to try it!!! Thank you!!!

  4. Am I missing something? I can’t find an ingredient list that tells how much of anything to use for this recipe. Just pictures of the ingredients. Is an ad covering it?
