Lasagna has been a part of our family’s regular dinner rotation for years. My husband likes it best homemade, so I try to make it from scratch when I can. The hardest part about lasagna is that it is very time consuming to make from scratch. It’s not hard, necessarily, but there are a lot of steps to it. One day as I was pondering an easier way to make lasagna that would be just as delicious, I came across a recipe for Lasagna Soup. It uses many of the same ingredients as regular lasagna, but prep time was less and it didn’t require messing up multiple pots. When I was offered the chance to write a sponsored post for Ragu’, I knew immediately that I wanted to create a delicious yet simple recipe for Lasagna Soup. It was every bit as tasty and satisfying as layered baked lasagna, but this recipe was super simple. Here’s what you’ll need:

1-2 lbs. ground beef
1 jar Ragú® Old World Style® Traditional Sauce
1 box chicken stock
1 bell pepper, diced
1 tablespoon minced garlic
1 small onion, diced
1 package lasagna noodles
2 teaspoons Italian seasoning
1 can diced tomatoes
1 tablespoon brown sugar
Salt and pepper to taste
1 2-cup package shredded Six Cheese Italian Cheese

In a large pot or dutch oven, brown the ground beef over medium heat. Drain well, and return to dutch oven.

Add in onion, garlic, and bell pepper and cook with meat for about 3-5 minutes.

Add in the Ragú® Old World Style® Traditional Sauce and mix together. I like to use Ragu’ because each jar of Ragú® Old World Style® Traditional Sauce is made with 11 juicy tomatoes making it its richest, thickest recipe.

Add in the chicken stock, tomatoes, and Italian seasoning and mix well.

Break up lasagna noodles and add into pot. Mix well so that noodles don’t stick together.

Cook for about 20 minutes or until noodle pieces are tender. Remove from heat.

Stir in about 1 1/2 cups of shredded cheese. Stir until cheese is melted.

Spoon into bowls and top with additional cheese. Enjoy!

  4. It’s good, but next time I will leave out the pepper. it seems to change it from a lasagna flavor for me, to more of a stuffed pepper kind of thing … still good, but not what I was hoping for. I may go with mushrooms instead. I love being able to cook it all in one pot!

      The thing I love about a dish like this is that you can change it up so that it fits YOUR taste. It would definitely be delicious with mushrooms.
