I am one of three children in my family, and when I was growing up my mom always baked cookies. Three hungry kids can eat LOTS and LOTS of cookies, so she stayed pretty busy coming up with new ideas and baking, baking, baking. One of my favorite cookies she made were these Chocolate No-Bake Cookies. They are chewy, chocolate-y, and kid friendly. I made a batch for my girls yesterday, and they are almost all gone!
With only seven ingredients, it’s easy to keep ingredients on hand to whip up a batch of Chocolate No-Bake Cookies anytime.
And since there is no baking involved, you can have a batch ready to eat within about an hour!
- 1 stick butter
- 2 cups sugar
- 1/2 cup milk
- 1/4 cup cocoa
- 1/2 cup creamy peanut butter
- 1 tablespoon vanilla extract
- 3 cups quick cook oats
- In a heavy saucepan over medium heat, melt butter, sugar, milk, and cocoa together. While stirring constantly so it doesn't stick to bottom, bring to a rolling boil. Let boil, while stirring, for one minute. Remove from heat and stir in peanut butter until melted and well blended. Add in vanilla and stir. Add in quick cook oats and stir until incorporated. Drop by spoonfuls (or cookie scoop!!) onto wax paper. Allow to cool for 30 minutes so that cookies will set up.
- Tips: This recipe is a bit tricky. If recipe isn't followed precisely, cookies will either be hard and crumbly or won't set up. Stick to creamy pb and quick cook oats. Using crunchy pb or regular oats will result in crumbly cookies.
