Breakfast Casserole

Breakfast can sometimes be a struggle around this place. My family likes a “real” meal in the morning, but there isn’t always time for me to cook a lot in the mornings. This breakfast casserole is great to fix ahead and stick in the fridge. It can be warmed in the microwave, and BAM! Homecooked breakfast meal.

1 lb. ground sausage
1 box Rice-A-Roni Long Grain and Wild Rice
1 can water chestnuts
1 green onion
1 pkg fresh sliced mushrooms

Brown the sausage over medium heat in a dutch oven. Crumble it finely as it cooks.

Add in the package of mushrooms and continue cooking about 5 more minutes.

Add in the seasoning packet from the Rice-A-Roni. Mix well into meat/mushroom mixture.

There are about a million different flavors of Rice-A-Roni, and truth be told, you could use whichever one you prefer. Here’s the one we use.

Mix the dry rice into the mushroom/meat/seasoning mixture. Blend rice well and let it simmer about 3 minutes.

Add 3 cups of hot water and mix well. Put lid on dutch oven and let it cook for about 20 minutes or until rice is tender, stirring occasionally so that it doesn’t stick to the bottom. During last five minutes of cooking time, add water chestnuts and green onions.

This recipe is a crowd-pleaser. I have served it for Christmas breakfast, for Sunday school socials, and lots of other big gatherings. When I do, I double the recipe (hence the picture of two rice packages above πŸ™‚

If made ahead for a crowd, it can be transferred to a baking dish and warmed on 350 degrees for about 20 minutes. Be sure to keep it covered so it doesn’t dry out.
