Caesar Mashed Potatoes

Is there any homemade dish better than mashed potatoes? We love our potatoes around the Hill Hangout and I am always looking for new ways to fix them. We eat them fried, roasted, baked, au gratin, hashbrowned, broiled, and casseroled, but one of the easiest and yummiest ways we like them is mashed. I realize that most people consider homemade mashed potatoes difficult or time-consuming, but they really don’t have to be. This dish requires a little elbow power when it comes time to mash, but other than that, they are super-easy and very versatile. You can add all kinds of different ingredients! But when you’re in a hurry, grab a bag of red potatoes and a bottle of Caesar salad dressing and you are all set.

First, wash the potatoes and put them into a pot of boiling water. Make sure you cover the potatoes fully with water or the tops won’t cook. If the potatoes are on the largish side, cut them in half or even quarter them. I like to leave the skins on for texture and nutritional value, but you can certainly peel them if you wish. Boil for 20-30 minutes.

When you can easily cut through a potato with a fork, you are ready to drain them.

You can use most any Caesar dressing you like. I use this small bottle of Marzetti’s because it has a good, strong Caesar flavor.

Next, pour in the Caesar dressing. I use about a half cup for a whole bag of potatoes. It’s best to start with a smaller amount and add as you mash. I salt and pepper at this point as well. Don’t be surprised by the amount of salt you will have to use to get the potatoes salty enough. They really soak up salt!

Now you are ready to mash it all together. I use a potato masher, which I finally gave in and purchased because we make these potatoes so often. You can actually mash them with a hand mixer if you don’t have a potato masher. We like our potatoes a little chinkier, so I don’t mash them very long — just enough to get the dressing mixed in well.

I’m delighted to tell you that that’s all there is to it. See, not as hard as some people think! We eat these at least once a week. Sometimes we make them with ranch dressing or sour cream, cheese, and horseradish. The left-overs (if you have any) can go in the fridge and be warmed in the microwave later.

Caesar mashed potatoes work well with grilled chicken, hamburger steak, or pork chops. Y’all let us know if you try them!

    Had a spare Caesar salad dressing bottle and wanted creamy taste to add to ordinary mash for new year day dinner.

    Looked up on ‘tinternet to see if others did it and bingo!

    This was made as a side filler to Deliah Smith (BBC Worldwide) Winter collection (Utube)
    Venison/Pancetta/Echalion, (Banana Shallot)/Juniper/Bayleaf/Wine etc slow cooked stew.

    Flipping excellent!
