Carrot Apple Muffins

I believe I have documented well my childrens’ aversion to anything resembling a vegetable or a fruit. This recipe is one of my tricks to get them to eat fruits and veggies. They always gobble them down and ask for more. Sure, you could actually call these muffins “cake”, but I prefer the term “muffins” as it sounds much more healthy. Ahem.

2 cups carrots, cooked until very done (aka mushy)
1 apple, peeled or 1 cup applesauce
2 cups all purpose whole wheat flour (regular flour can be substituted)
1 1/4 cup sugar
3/4 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
3 eggs
3/4 cup oil
1 1/2 teaspoon vanilla

Boil carrots in saucepan on stove until you can smash them with a fork. Drain off water and pour carrots into blender. Add apples or applesauce to blender. Add oil, vanilla, and eggs to blender. Blend ingredients together until smooth.

In a separate mixing bowl, mix together flour, sugar, baking soda, baking powder, salt, and cinnamon. Stir until all ingredients are blended together.

Add wet mixture to dry mixture and blend well. Fill muffin cups about 2/3 full (I use an ice cream scoop and one scoop in each muffin cup is the perfect amount.) Bake on 350 degrees for 15-ish minutes, as baking times vary from oven to oven.

  3. My kids have always been great vegetable eaters until recently. My daughter who is 4 has suddenly decided that she doesn’t like a great many things, including things that I know she does like! lol.
    These look delicious, and I love sneaking the carrots into them!
