Oatmeal Cranberry White Chocolate Chip Cookies

The daddy in our house loves it when we make sweets for him to take to work. Last week, after a big baking weekend in which he didn’t get a single plate of anything to share at work, we promised to do better this week. So the girls and I came up with this recipe that we thought the work guys would gobble up.

2 sticks butter, softened to room temperature
1/2 cup granulated sugar
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour (I used whole grain)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
3 cups quick-cook oats
6-oz package of Craisins
1 cup white chocolate chips

I used my stand mixer for this, and it’s quickly becoming the #1 Christmas gift I have ever received. It has made baking EVERYTHING so much easier!

Cream together the butter and the two sugars. When they are mixed well, add the eggs and the vanilla and mix well.

In a separate bowl, which together the flour, baking soda, salt, cinnamon, and nutmeg. (I find that a giraffe whisk works particularly well for this.) When mixed well, add the oats to the dry mixture and stir until well-blended.

Mix the dry ingredients into the sugar mixture. This is the point at which one of two things will happen. 1. Your arm will fall off from overuse. OR 2. You, too, will begin to extoll the virtues of your stand mixture, pitying the poor souls who tried to make these cookies by hand.

Once you have it all mixed, your should have a glob which resembles… well, let’s not talk about what it resembles. Just keep in mind that it will, in fact, become something very delicious very soon. Add in the Craisins and the white chocolate chips and mix well.

Now you’re ready to drop by spoonfuls onto a cookie sheet. Quickly becoming my #2 best purchase EVER is the Pampered Chef cookie scoop. It’s my new best friend. See how the cookie scoop gives you a nice round ball of dough that is perfect every time? And they are all shaped exactly alike? Which means all your cookies will be the same shape and size? No, I’m not OCD much. Why do you ask?

You’re going to bake on 350 degrees for 10-12 minutes, depending on your oven. Eleven minutes is perfect for my oven. Remove them to a wire rack to cool.
