Grouper Sandwiches with Spicy Caper Dill Mayonnaise

We try to eat a lot of fish around the Hill Hangout. It’s healthy and delicious, and we have served it a million different ways. The other night the whole family ate a favorite local spot called Taziki’s, and I ordered a fabulous fish sandwich that I wanted to copycat at home. The fish itself was really good, but the mayonnaise sauce really set it off. Here’s my version:

For the mayonnaise you will need:
1/2 cup mayonnaise
1/2 teaspoon lemon juice
1/4 teaspoon lemon zest
3 teaspoons capers
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes
1/2 of a jalapeño pepper, diced
1 teaspoon dill weed
1/2 teaspoon parsley

This is an easy dump and mix recipe. Dump it all together and mix well. I made my mayonnaise the night before so it wouldn’t take so long to get lunch prepared after church, but you could do it as you prepare the fish as well. We liked our mayo spicy, but if you want to cool it off a bit, you could leave off the red pepper flakes or jalapeño. It would still be very yummy and flavorful.

For the sandwiches:
4 fillets of grouper (You can also use flounder, salmon, or your favorite fish)
Old Bay Seasoning
1 loaf french bread
4 lettuce leaves
Olive Oil cooking spray or butter

Sprinkle the fish fillets liberally with Old Bay. I use two fillets for each sandwich, but you could use more or less, depending on the size of your fillets. As you can see, I used aluminum foil on my pan to make clean-up easy. Bake in 400 degree oven for 15-20 minutes, depending on thickness of fillet.

Slice french bread into sandwich size pieces. Cut in half lengthwise, and spray each side with olive oil spray (or butter). As fish is nearing end of cooking time, toast french bread in oven.

Spread mayonnaise mixture over french bread.

Add lettuce and fish to sandwich, and you’re ready to enjoy!

We served this sandwich with cantaloupe and strawberries to keep it light. It would also be yummy with your favorite chips or even some crispy oven fries. Hope you all enjoy it!
